Onion Chutney
A spicy yummy chutney which has just 4 ingredients. A must try combination with Idli and Dosa or even roti too...I have also used this as a spread on brown/wholegrain bread and it tastes so good.
Ingredients:
Onions - 2 large, finely sliced
Dry Red Chillies - 6 to 8 (adjust to your taste)
Salt
Oil - 1 tbsp
Preparation:
1. Heat oil in a pan and add dry red chillies and saute for a few seconds. Add the onions and salt and saute till onions are brown. The secret of the taste comes from sauting the onions properly. They should be a medium brown colour (take care not to burn). Turn off the stove and let the onion mix cool. Grind to a smooth paste in a mixer without adding any water.
2. Heat the same pan and saute the onion paste till oil starts appearing. Chutney is ready.
You may do a seasoning with mustard seeds, but that is optional. It tastes good even without any tempering/seasoning.
